Measure in the extra virgin olive oil and the soy sauce. Cut the okra down the middle, length-wise, to reveal the seeds. Use a sharp knife to slice off the caps/stems. Turn it on 20-30 minutes before you plan to roast the okra. Make sure the rack is in the middle of the oven. The oven needs to be very very hot (specifically, 425 ☏) to get the right texture. Kosher salt and black pepper-we’ll just need a little of each to season the veggie.
